Had a fun cooking night as a Friday night treat. I thought I'd try making a summer vegetable sort of enchilada. I added a lime, garlic and jalapeno marinated chicken breast to it. Very tasty, pretty healthy too!
So I added THREE 70cal spoons of frosting for dessert---this was a splurge. I admit it!!!! But I said I'd post what I eat, so posting I am. :)
For the enchiladas, I sauteed zucchini, green beans and corn.
Then I tossed in about 50g (sorry I don't know how much that is--I just use the containers to measure) sour cream and a handful of chopped chives. I wrapped a scoop in a tortilla and topped with a sauce made of sour cream, lime juice and chives.
For the chicken, I marinated a chicken breast in lime juice, chopped jalapeno with seeds, cumin and chopped garlic. Then I George Forman-ed that sucka and topped it with salsa.
